How To Hide The Veggies

As a wife and mother I am constantly battling the family on food choices. I want them to eat somewhat healthy and drink water and they don’t. So I’ve learned to pick my battles and HIDE the veggies in foods they like. Case in point, this week I was crunched on time and wanted to do something simple like pasta. Although I frequently us whole wheat pasta as a healthier option, when we do pasta night, it never comes with a side of veggies …….. Unless I hide them.

I boiled my garden veggie pasta al dente, then grabbed a baking dish and started layering. Stuffing in as many veggies as possible.

Each time covering the veggies with a little sauce and cheese.

Then bake til bubbly & everyone is happy.

This was so easy and can be done with a variety of veggies but I used what I had on hand. Please feel free to change it up to suit your family!

1 box of garden veggie pasta cooked al dente
1.5 jars pasta sauce
2 chicken breasts cooked & shredded
1 bag of shredded cheese
1/2 bag of fresh spinach
1 box mushrooms
Garlic & Italian Seasoning to taste.

I sprayed the baking dish with cooking spray and started layering: sauce, veggies, pasta, chicken, cheese, spices, sauce, repeat. Bake at 425 degrees until bubbly, which was about 35 minutes in my oven.

Don’t be afraid to hide the veggies on your family too! I do it all the time and most of the time they don’t seem to mind too much although if I put spinach in Aby’s scrambled eggs one more time she may take over the cooking!. Good luck!

Libby’s Last Long Run

I took Libby, my Weimaraner, with me on Sunday’s trail run. Beautiful day, not too cold, not too hot, great day to run with a dog. It’s been awhile since I’ve ran with her for various reasons but I expected a normal run. Please note that “normal” when running with a hunting dog is relative. I was hoping to avoid her pulling me off trail in search of birds. I was hoping to keep her on trail and focused on the run rather than the hunt. If I could put blinders on her I’d consider it but would still need to contend with the acute hearing and sense of smell; therefore, blinders would be useless. 🙂

If you’ve never ran with a hunting dog, this is what it looks like:

They are almost ALWAYS in front of you. Not in heel position. Not even in heel if they have been thru 3 very good training/obedience classes. Never. But that’s okay, I don’t mind her leading the way. She’s led a lot of hiking and running miles over the last 8 years. She has ran long runs with me up to the half marathon distance many a times without so much as blinking twice at the distance, in fact she frequently looks back at me when I start lagging as if to say, “you doing ok, mom?”. If a dog could be a soulmate, then that’s what Libby is to me. When I stop for sightseeing or photos, she stops too without a complaint. She is always just content to be with me regardless of the activity.

We maintained a slowish pace for the first half with me stopping for photos a million times frequently but the mental plan was to hit the half way mark (4 miles), flip and bust it back to the car. That’s almost always our modus operandi and she knows when we turn, we are going home. It’s normally difficult to keep up with the speed she wants to run. At 5 miles, Libby fell into heel position. I actually chuckled and looked at my watch while thinking to myself, “how many miles does it take for an 8 year old weim to fall into heel?” The chuckles were short lived though when Lib slowed to a walk at 5.25 miles. Ugh oh….. The car is at mile 8. Apparently, weims get old too. The writing had been on the wall for quite sometime but I had been in denial. My girl has lots of lumps, bumps & skin tags. She has a very prominent one in the lymph nodes of her front right leg. You can even see it here.

I managed to get Lib back to the car, slowly, walk/jogging, with lots of coaxing, but she was exhausted for 2 days thereafter.

So reality has set in, we are all aging, some of us infinitely faster than others. It was a wakeup call for me to take a minute to smell the roses before they wilt and are gone for good. No more long runs for my Lib; however, I’ll still take her for the shorter runs which she loves. We will do that for as long as she is able before we enter the next chapter of our lives.

I’m a firm believer in making each and every day count. I have always felt as if I were on borrowed time. I know it’s impossible to fit “everything” in but I’m still going to try. I encourage you to not only make today count but to move forward with your life in a positive manner leaving behind a trail in which you will be proud to call your own. Know that tomorrow is today so don’t wait because nothing is guaranteed.

Yurbuds Inspire for Women Review & Giveaway

My number one issue with earphones is that they do not fit my ear.  If I take music on a run I rarely use it or I “save” it for when I need it.  I am never able to listen long because my earphones dig into my ears and hurt.  And I can’t even count the number of times that I have made the decision to turn on the music and I don’t get any sound because the wires and/or device got wet and wouldn’t work.  I stopped taking music with me for the above reasons.   It was for these same reasons that I honestly wanted to try the Yurbuds Inspire for Women.

They came in the mail and I was tentatively excited (iPod not included).

There are two sizes of earphones in each package.  I compared them to a penny as a point of reference and am super happy my old bar skillz of standing a coin on end FINALLY came in handy!

I opted to try the smaller set since the larger size is the approximate size of an iPod earbud and that is normally too large for my ear.    They fit perfectly.  First use was indoors on the treadmill.  I plugged in while the family was milling around the house and crossed my fingers!  I am normally not able to hear my music unless its blaring because life around me is “abuzz”.  However, these earphones twisted in, fit well and I was immediately impressed with the sound quality AND how loud my player was from its last session.  I was able to turn down the volume considerably and still hear the tunes.  Plus, I kept thinking that the music just SOUNDED so much more vibrant (can I use this word for SOUND?) than normal.  Hmmmmm…..  So strange.  So I ran, was sweaty and nasty, able to hear the music the entire time and the sound was sooooo much better than I remembered.  The earphones never hurt my ears and they never moved.  In fact, I was so intent on the sound of the music, I forgot about the earphones all together.  This is good for me!  Sweaty photo below.

I’ve since tried the Yurbuds Inspire for Women earphones multiple times both indoors and out and I’m in love with these things.  They sound “normal” when only using one earphone but really shine on the sound quality front with both earphones locked into position.  Oh yeah, and they fit my ear!  They fit when I run, when I do the StairMaster and Elliptical.  Next up, a Tae Bo workout.  If they can survive Billy Blanks, then they will survive any fitness activity!

I’m definitely going to pick up a pair of these babies in pink for Aby for Christmas.  I know the size of earphones is always an issue for her tiny ears as well.  I’m super excited about this new product!

Kankakee River State Park

I stumbled onto a sign for the Kankakee River State Park while driving on Saturday and was immediately hoping to give it a “run” on Sunday.  The park is in Bourbonnais, IL but truly in the middle of nowhere along IL Route 102, west of Bourbonnais & Manteno.  I drove south on Route 45 and then followed the signs when I got to the Manteno intersection.  The park runs parallel to Route 102 and there are multiple entrances.  I just picked one and parked.

The main bike trail begins at Davis Creek, and travels for 10.5 miles west.  Roundtrip, that’s 21 miles of amazing paved trail!  There were several dirt off spurs which would also allow for additional adventure but I’m a “follow the paved trail” kind of girl so I just stuck to the main path and it was super easy.  No chance of getting lost.  Win!

I drug my trusty running partner off the couch to go exploring with me!  Meet Libby.  She is a weimaraner, runner extraordinaire and overall best friend.  She’s covered a lot of miles with me over the years and has helped me up some nasty hills too.  🙂

We saw lots of amazing sites, a few runners, a couple bikers, some squirrels, a quail and a branch even fell on the trail directly in front of us one time.  If a girl screams in the woods and nobody hears…..

The trail was marked extremely well, so if you like to run “naked” without your technology, this is a good spot with well maintained, visible mile markers every half mile.   There was never a question as to where I was or how far I had traveled.  Nice touch!

There were also a lot of cool bridges.  Finding old bridges in different styles is one of my favorite things about running a new trail so the Kankakee River State Park trail was a major win for me!

The water was always close to the trail.  You could see it peeking between the trees, thru the openings, and while crossing those old beautiful bridges.

Overall, this was a great trail and it was very well maintained.  I absolutely loved every section that I ran.  I started just before the mile 5 marker and ran almost to the end before returning to my car.  It was beautiful!  There were bathrooms in several areas.  Lots of access roads with parking/camping/picnic areas.  Kankakee River State Park would be perfect for families, runners/bikers, moms with jogging strollers and FurMoms who need to run/walk the dogs.  If you have the jogging stroller and/or a biking tot beware of those steep hill sections.  Also note that this trail is in the MIDDLE OF NOWHERE.  There were several camping areas which I ran thru but in between camp sites, it was pretty desolate.  The river bordered one side of the trail and at times I could see Route 102 on the other.  The majority of the time, however, the trial is just engulfed by forest preserve.  If you like peace and quiet, this is YOUR trail.  If you like to run in a bit more populated area, you might not be comfortable here.

Regardless of what you prefer, get out the door and enjoy these last few days of fall.  Winter is coming and then we can talk about breaking new trails in the snow!

The Cat’s Out….

Inspirational Jewelry Giveaway

Favorite Things….2012 Edition

Christmas may not be on your mind but it is on the mind of some, myself included.  I’ve been asked to identify a few of my favorite things as a few ladies I know are starting to pen their Christmas lists. 

My current absolute favorite thing is the new GPS Running Watch for Dummies Garmin Forerunner 10.  At $129, I believe that this is the best bang for your buck on the GPS Running Watch market.  I own the green one.  Aby put a pink one on her Christmas list.  This is a simple device that doesn’t create a mountain of data that you don’t have time to study anyhow out of your run.  What you do get is a constant update of your time, pace and distance.  There is also a virtual pacer, which will tell you that you are constantly behind, ahead or on your desired pace.

Aurelia & I’s run last night is below.  We both had tired legs and were talking non-stop but damn we were consistent!

  • Smallest, most comfortable GPS watch on the market for women.
  • It fits my arm very well and I can actually wear the watch all day long. 
  • Looks somewhat fashionable in a casual sense.

  • Device records 7 runs before overwriting, so don’t be lazy about uploading or you’ll lose the data if you care

Fourth, another wish list item of mine is this pair of Keen – Laken High Boots that I have been stalking “watching”.  At $190, they are a bit outside my budget and probably Santa’s but hey, this is a WISH list, so I can wish!  Plus, with our cold, windy Chicago winters, I think I actually NEED a pair of these or at least that’s what I’ll be telling Santa.  🙂

If Santa can’t afford the Keen Laken’s above, then my second choice which isn’t that much cheaper would be these Keen Sunriver High Boots at $130.  These cute purple boots (more color options)  also just so happen to match the purple I Run Burnout Hoodie that’s also on my list.

Last but not least, I have several new favorites from Brooks Running.  Aby and I have the Nightlife Essential LS 1/2 Zip for $65.  It’s bright, plus very soft and has a great fit.  There are other color options if you’re not into pink.  I wore it for the Hot Chocolate race and I think it helped others pick me out of that massive crowd, see the crappy lit photo below.  🙂

The Brooks Pure Cadence are another favorite at $120.  I have two pair of these (different colors) but I prefer the bright pink color.  These aren’t my training shoes but I love them for short races!  They are cute, flashy and they are comfortable enough to wear all day long if necessary.  Win, Win!

Since running makes me happy, I’m of course drown to the Brooks Run Happy campaign.  Therefore, I grabbed one of the EZ T LS Run Happy shirts off the women’s sale section for $23.  They have several color options but I picked the orange.

Hot Chocolate 5K 2012 Chicago Race Review…..

Where to start?  So much to say.  So much I shouldn’t say.  Let’s just start at the beginning.  Great trip into the city with my friends.  Traffic was non-existent, we parked and had plenty of time to meet up with some F’N Runners pre-race.  From back left:  John, Dawn, Melissa, Me, Nicki, Pam.  Bottom left:  Kathy, Cathie, Sue, & Melanie.

We had a great group who managed to make it to the race early enough for a photo!  We took the pic then headed to gear check.  Everything went smoothly, gear check was well marked and easy to find, the volunteers were cold but very cheerful and welcoming.  Then we said our goodbyes and headed for our corrals.  Nicki, Myself & Pam outside of gear check.

I was assigned to Corral A after a decent run at last year’s 15K race but it was looking a little “intense” up there and well, I’m not even close to 100% so I opted to slide back into Corral B with Kelly (Running Kellometers) and Sierra (Posh Meets Pavement).  It was good because we shivered together chatted and awaited the start.  Corral A went off at 7am, then each of the subsequent corrals went off 3 minutes and 30 seconds later.  There were 20 corrals.  Therefore it took over 70 minutes (possibly longer) to get all the corrals thru the start.  Then they had a walking event.

When Corral B took off, it was a good start.  I was in a good spot, not running too fast or slow.  The course was not the full downtown tour that we experienced last year but the 5K did stick to the streets.  However, the course led us down by the lake and onto a narrow entrance ramp. Traffic was tight even up in Corral B and there were several points where I was jammed up and not able to get around  slower runners as the course turned and/or narrowed.  I didn’t experience this on last year’s course so was a bit surprised but not upset.  It happens although not very often in Corral B.  Plus, we had walkers.  Yes, walkers.  The walkers who managed to somehow start in front of us.  Where did these walkers start, in Corral A?  Maybe they ran the first half mile then decided to walk the rest?  I’m not really sure and don’t want to waste any energy trying to figure that one out but that too was a bit of a surprise. 

Other than a few tight turns and the one narrow entrance ramp, I actually liked the course.  The 5K course was always in close proximity to the start/finish area.  We saw other runners at a few points on course.  Then we looped back past the start line and we were able to see all the runners who were still awaiting the start of their race.  This 5K course (below in blue) was spectator friendly too!

I finished in 24:25.  I was thinking I might be able to pull off a sub 24 but Mount Roosevelt, as some affectionately call the Roosevelt Bridge, did a number on me and took some of the wind from my sails.  So I was happy with the result and I felt strong most of the way.   

As soon as I hit the finish I could still see all the runners who were still waiting to start.  My friend Nicki was in Corral P, so I just kept running thru the finish area, back to the start to see if I could get a glimpse of her and waive her off.  However, once I got up there, I realized that many of my fast 5K friends were back in line for another run of the course.  In fact, I was even cajoled by a group of 6 of them telling me to get back in line and run it again!  Now, I know this is not very ethical and normally something I wouldn’t even consider but the whole entire process was such a sham that it seemed like a good idea at the time.   I thought I was being “slick” by pulling a timing strip off the back of my bib, so as not to confuse the timing system, but alas this bib had 2 timing strips!  As I got back in line with Nicki and subsequently ran the race again with her, I overwrote my first 5K time……even though I only had one timing strip.  Oooops! 

But the race with Nicki was absolutely worth it!  I had so much fun and loved experiencing the race from her point of view.  I didn’t use any water on the course the first time, or the second time.  I swear I didn’t hold anyone up in Corral P who wanted to run faster.  I really didn’t affect anyone else’s race by running a second time other than Nicki’s.  It was fun but dang was it crowded by that point!  There were a ton of walkers.  We were constantly weaving in and out of run/walkers.  Plus the course was so congested because of said walkers that the little exit ramp that had previously slowed me down was now at an absolute standstill.  Several people around us just stopped running while commenting that they could walk faster.  Funny!  But everyone was in good spirits and Nicki and I just plugged along with me burning her ear with stories and non-stop chatter.  SO.MUCH.FUN. 

Interesting stats – My 5K from Corral B – 3.17 miles.  Nicki’s 5K from Corral P – 3.4 miles.  Same course, more weaving in the later corral. 

Once we finished, we mingled with the other runners and were waiting for a few friends.  One man I know ran the 5K, then removed BOTH of his timing strips and proceeded to run the 15K.  He did all this as RAM Racing was meticulously starting corrals at 3 min and 30 second intervals.  Good theory which turned poor in practice and resulted in a lot of people waiting out in the cold for a very long time. Some of us could have ran the race 2 or three times, and we did.  Ethical?  Absolutely not but it was just about fun and/or running our training miles.  Plus we were waiting for friends for so long that we had to do something besides just stand around in the cold. We are RUNNERS.  So we ran.  The roads were open, we took advantage of the situation.

The chocolate was way up in that white tent.  The lines were a bit crazy but it went fast and the mug of goodies was amazing.  This  photo was posted to the Hot Chocolate Facebook page.  Thankfully, someone managed to get a photo of the goodies!  Banana, Apple Slices, pretzels, marshmallow, rice crispy treat & a full cup of hot chocolate.  Yum!

So I had fun!  I’ve never seen so many adults walking around with chocolate smeared on their faces, clothes and hands.  I loved the experience of running the race (x2).  I would love for Ram Racing to get it together so I can do this race again, at some point in the future.  However, I won’t be running the Hot Chocolate in 2013 and honestly, quite possibly never again.  There are so many really great races and I’m going to go to the most well ran, easiest, fun race around.  Races that support and respect my run friends and myself.  Races that fully acknowledge that we have choices and then proceed accordingly.  Races that know that its a PITA for the runners to pick up packets and then make it as easy as possible for us to slide in an out of a packet-up pick up location with our kids in tow.  Races that know how many people they can safely accommodate and limit the registration numbers to what THEY can manage. 

All in all, I had fun but I’m a firm believer that if you don’t have fun, it’s your own fault.  We came, we ran, we ate chocolate.  Now onto the next thing…..

I’d like to preface this post with the fact that I honestly don’t like complainers.  I also don’t like to read blog postings constantly slamming events and race management.  The idea of managing and executing a big race is not easy and I fully acknowledge such and give them the appropriate amount of respect slack.  However, as a blogger, I believe I have a bit of a responsibility to tell “the reader” what’s up in the race arena. If we want to “go there”, I run more races in a year than some will ever run in a lifetime. So I know races, I know expos, I know that the only thing to expect is the UNEXPECTED but I too have limits.   So…..

How often does an expo get a post of its very own?  Not often unless one doesn’t have much else to do or say its really amazing or its really, REALLY bad.   Well, congratulations to RAM Racing for pulling a 2nd expo post out of me (I posted on last year’s expo HERE) …… and it wasn’t cuz it was amazing.  In fact, I wouldn’t even know if the 2012 expo were amazing because after I waited in line for 1 hour and 57 minutes OUTSIDE IN THE COLD, on my lunch “hour”, I was no longer amused by the chocolaty theme and just needed to leave.  

The 2012 Hot Chocolate 5K/15K Chicago race called for some changes.  To be honest, I’m not sure I would have registered but my girl, Nicky and I ran last year, we loved it, then spent the afternoon post race downtown bar hopping shopping.  So we she wanted a repeat.  Done.  Let’s do it!  Right? 

WRONG!  Things have gotten off to a bit of a rough start and I’m not even to the race yet.  Pam and I thought we’d pop over to the “new and improved” expo site in a Soldier Field parking lot at LUNCH to grab our packets.  Now, I go ALL THE TIME at lunch to pick up packets and while I won’t necessarily say I manage it all within my lunch “hour”, its usually close enough to make it happen.  Pam and I were excited as we stepped out of the cab:

Until we notice this massive line and about 40 port-o-potties lined up on the “other” side of the line.  Say what?  How far does that go down?  Are we really going to need those port-o-potties?

That BLANK white box would be where I was going to paste in all of our tweets to Ram Racing while waiting in line for our packets.  The tweets we composed while we were bored standing in line, freezing, in a parking lot.  However, they deleted “our” tweets off their Twitter account.   But they can’t delete the tweets from MY page…..

@michughes @RAMRacing I was 1 hr 57 min for packet pickup.

Wow, that was fun.  I waited.  I was cold.  I got “irritated”.  Pam had to go back to work. I was shocked that I had NEVER been to a more poorly ran packet pick-up.  I couldn’t get the phrase “time is money” out of my head.  I was irritated that somehow my time meant nothing to RAM Racing.  I considered sending them a bill at my hourly rate.  I considered sending them a bill at the hourly rate of the IronWOman surgeon standing next to me.  I considered leaving.  I decided to run the NYC Marathon NEXT year.  I finally got to the port-o-potties that provided a much needed wind break.  I was close.  I was FINALLY inside …… only to realize that there was another line to wait more.  AND THEN I picked up the packets.  One hour and fifty seven minutes.  Not even ONE minute was exaggerated and then I needed to wait in the cab line to head back to work so I could leave for my awesome commute home to get Toddler Man before his school closed up and/or called CPS on me.

Was it worth the wait?  Hmmmm ……. you have to be the judge of that.  This year the swag was a technical, gender specific hoodie.  I don’t like hoodies at all but this fits well and I think looks good.  It’s so much better than I anticipated.

And they got my corral right, so that’s a major WIN in their column.  Cool bag too.

However, I’ve already decided that on principal alone, I personally need to sit out the 2013 Hot Chocolate Chicago race.  I hope they get their shit together cuz I really like this race.  Or I should say that I liked last year’s race.  Who knows what tomorrow will bring but I have to believe for my own personal sanity that the worse is over.

I’ll see you tomorrow bright and early RAM Racing.  I’m counting on you to bring me an amazing race experience.  Don’t let me down.  Screw up packet pick-up as badly as you did and that’s one thing, screw up the race that’s a whole ‘nother thing.
