A Class Act …… Run Disney

I am blessed to know runners of all shapes, sizes and levels of ability.  I can look one direction and say hello to a low 3 hour marathoner, then another and greet a 6.5 to 7 hour runner.  This is specifically why I love running so much, it’s for anyone who WANTS to do it.  Not many sports can say the same but running, yes, we take anyone, regardless of pace.  A little desire & motivation to haul your bum out the door and you too can be a runner.  That makes me proud to be part of such a diverse group.

its-still-a-mile

Run events are a lot like people.  We have good ones and bad ones.  Some make me ashamed to have been swept up into the hoopla and actually have participated, others make me smile.  Very few leave me thinking that they provided a classy event, cared  A LOT about their runners and delivered exactly what they promised in a race experience.

If you run or even know any runners, then you may have heard about a “little” event taking place this weekend at “The Happiest Place on Earth”…… Walt Disney World, Orlando, FL.  The mega travel/media/PR/experience agency RunDisney sells a very magical weekend for runners.  They even offer special gifts for booking your race & travel experience thru them.  So if you plan to “run” Disney, then don’t forget to just go to the people who know it best and book thru them so you get all the available goodies!

I must say that I have never even considered “running” Disney.  For the last several  years I have seen so many ladies running off to Disney for their dream “run”cation.  They go alone, or with girlfriends, some take the family but most just go to experience their favorite thing in the “most magical place on earth”.    It always made me chuckle cuz to be honest, I wouldn’t go within a 100 mile radius of Orlando ever again if it weren’t for the kids.  Disney to me does not mean magic, or fun, or romance, or girls getaway but instead …… standing in lines, in horrid heat and melting the day away …. all while be pawed by a toddler who is intimidated by the insane crowds but who doesn’t want to miss a thing.  My fun at Disney comes from watching the kiddos light up with excitement when something on screen becomes reality.

Seeing the characters/actors take the time to talk to the little ones and give them the magical experience that we so dearly wanted for them.  (Aby – Disneyland, Sept 2004)

I don’t think of Disney as an adult destination and therefore would never think to go “run” Disney for fun.  However, a few things I’ve heard as of late, have made me think otherwise.  When I was at Ragnar one of my teammates, a man, kept saying that the Disney Marathon was the BEST.RACE.EVER.  He kept referring to the marathon as the best of the best.  I thought that to be odd.  Then I kept seeing everyone heading down to Orlando for their dream “run”cation and it was the same, loads of excitement and very happy people.  Now these are also people who paid a very high price tag for their race weekend between flights, hotels, and entry fees.  I was hoping that RunDisney would be able to provide half the race for the hype; I just wasn’t sure they would be able to pull it off but I was watching.  I’ve been watching all weekend via instagram, twitter, facebook & various message boards.  Looking for the one person who was going to tell it like it was …..  or maybe tell it like I expected it to be, that this was just one more race where the hype did not live up to reality.  However, I haven’t seen it.  The very opposite in fact.

The thing that actually sold me that maybe RunDisney was actually worthy of the rep, the hype and “possibly” even the price tag was when a friend of mine had to call it quits during the marathon today, at Mile 15 due to foot pain.  She is scheduled for surgery in the upcoming weeks but went to “run” Disney as her last hurrah before having to take an undeterminable amount of time off running.   Yes, she probably should have stayed home but I think she did exactly what all the rest of us would have done.  She went with the intent to just enjoy the experience regardless of however long it took her to complete the journey. Pain unfortunately took her out of this game.  She wanted to finish, her body wouldn’t allow it.  She stopped at Mile 15 and according to her,

“They radioed for a car and it was there in seconds.  I was taken to the car park at the finish.  Four medics met me, along with a lady with my medal.  They put a space blanket around me, wrapped me in ice and gave me my medal.  They also gave me snacks, drinks and took me to a shaded tent.  They could not have been nicer”.  See Jenny G below with her medal and also icing her feet in her Disney gear check bag.

Jenny_Disney medal

     Jenny on Ice_Disney Marathon

She also described amazing volunteers who offered sunscreen, Tylenol & Vaseline in the corrals as they awaited the start.  Then BioFreeze, Tylenol & Vaseline throughout as on course support.

I’ve heard lots of stories about races this year.  Some races didn’t have enough medals to cover all the participants and those at the back of the pack left empty handed.  Other races were super stingy with their medals and not wanting to give them to participants who didn’t make the time cut-off.   Stories like those make me cringe.  I’m an equal opportunity runner and think that everyone who covers the distance deserves the “bling”.  It means more to some than it does others.  In fact, some people identify their success with the bling they bring home.  It lessens the accomplishment for them if they don’t have that to show for their effort.  So I was beyond impressed that the RunDisney officials not only gave her a medal, when she didn’t necessarily even expect one, but also for just being there.  For being fast and making her feel important at a point when she was not only tired and hurting but also super sad about not being able to make it the finish under her own power.  From my friend, myself and all the countless people who have had an amazing experience “running” Disney today or at any point in the past.   Thank you, Thank You, THANK YOU!

I officially give RunDisney a big THUMBS UP for being an upstanding organization.  Congrats RunDisney, you are officially on my radar.

2013 …. What Lies Ahead

Since it’s been all Ragnar for quite some time, I thought I would take a break just for now and instead pin down a few 2013 goals.  Better late than never, right?

set and reach goal concept

I have a few general goals  that I will focus on for the entire year.  And remember, I roll with the K.I.S.S. principle.  Nothing too complicated, just simple but challenging goals.

  1. Run 1000 miles –  Although this seems like a no brainer, things happen, life happens and I don’t want to neglect my life in order to rack up run miles.  1000 miles is challenging, coming in at just under 20 miles a week, but also reasonable if I remain uninjured on the fitness wagon.
  2. Bike 2000 miles – Now this one may seem a little “Coo-Coo” but I biked almost 1000 miles this year and let’s just say that I didn’t give it a full effort.  I want to log miles every week of the year from here on out regardless of if TRI season is in session.
  3. Swim – Okay, I’m not ready to step in the pool yet…..still in denial here.
  4. Strength Train & Stretch – 2x per week.  This will be the first to be dropped.  I’m already worried about my schedule.  But this is the “goal”.  It won’t happen if it doesn’t even make the list, right?
  5. Drink 2 liters of water daily.
  6. Consume 5-7 servings of fruits & veggies daily.
  7. Be happy and have a positive attitude!

After the “general” goals, I then broke my training and race schedule into three parts:  Spring, Summer, Fall.  Each session having one goal race.  One focus.  Everything else will be for fun or quite possibly just not exist.  I’ve come to realize that with Aby in 3 sports per year, plus a toddler at home, our time is no longer our own.  I want Aby to be successful.  I want to support her in every way, which includes being at every race/game.  I’m not willing to sacrifice being her biggest supporter in order to once again, “log miles”.  For me, that means less racing, fewer “fun” miles, more focus oriented training.

focus

Between each session, I will rest and recover.  For example, this week, I’m doing nothing resting and focusing on non-impact activities to freshen up from Ragnar.  The bottom line is that “most” of us can’t just keep going without some downtime or we will get hurt or burnt out.  I know that there is an exception to every rule, Susan M, but most of us mere mortals need to rest.  I also find that as I get “older”, I have to be smarter about recovery.  Maybe because I’ve been doing this for most of my life?  Yes, that’s a “reality bites” admission.  Maybe because I’m not a sprinter youngin’ anymore?  I now focus on training smarter, not harder and utilize tools like Post Workout Recovery, ice baths and massage sticks to just be able to walk recover for the next workout.

Spring Session – Goal Race – Lansing Marathon – April 21, 2013

If you haven’t heard that I’m running the Lansing Marathon, then this is the first time you’ve stumbled on this blog cuz I’ve talked about it, given away a prize pack and basically tried to recruit everyone, and anyone, who runs to join me.   Don’t feel bad if I haven’t hit you up YET cuz I’ll get you eventually.  🙂  If you would like to join me in Lansing for the full, half, marathon relay or 5K, please feel free to use the $10 off discount code CHICAGO10 and click HERE to register.  You know a girl doesn’t like to run alone and I certainly hope to see YOU there!

Summer Session – Goal Race – Ironman 70.3 Racine – July 21, 2013

image

My TRI season last year didn’t go well. Ironman 70.3 Muncie was shorted due to the ridiculous heat (my report HERE) plus a tendon in my foot was torn so I couldn’t run, or finish.  I went with the intention to DNF.  I succeeded in acquiring my first DNF but it was not my favorite venue.  My second, and final, 70.3 of the year was going to be the Great Illini Challenge (my report HERE) but that race was called off due to the possibility probability of severe weather.  Completed triathlons in 2012 = Zero.  This year will be better.

Fall Session – Goal Race – TBD

I know many have their entire year planned but I’m keeping the fall schedule open.  This tends to be my fastest time of year.   I love the weather, I love the speed that my base mileage brings, I love to race.  However, the prior two sessions will dictate what Fall of 2013 will bring.  I’ve tossed around adding in another marathon but I need to see how my health is and how I am sitting mentally.  I may just sit on the couch and snuggle my baby run a half and some shorter races to take advantage of the speed.  Plus, if I’ve nailed some of my previous goal races, I’ll be cycling down rather than up.  Only time will tell.  I love a good mystery!!

Have you solidified a couple goals for 2013?  Do you have the entire year planned or are you okay with a couple question marks?

Christmas Fun….

Christmas is by far my favorite holiday. I love the spirit. I love the excitement of the lil ones. I love the celebration with family and friends whether you like them or not. I love the decor. I love the endless streaming of Christmas music. I really love it all …….. even the commercial aspect where some go above and beyond, for once, to give things that “normally” would be impractical. But my most favorite aspect is the little extra time I get to spend at home with the family. We may drive each other crazy but we love one another.

I did take advantage of the time to get in a few runs. A nice 12 miler as the sun came up on Saturday. 6 miles of flats, 6 miles of slow rolling hills.

20121226-124939.jpg

7 flat miles on Sunday.

20121226-125050.jpg

4 miles of zigzagging on Christmas Eve to avoid loose dogs, then lots of hanging with the fam.

20121226-125834.jpg

A cool gift from a friend….

20121226-125920.jpg

And more family time…..

20121226-130205.jpg

Lots of eating and drinking, movie watching and just chilling to the sounds of screaming laughing children. Now we play with the goodies and enjoy the spoils of another great Christmas. We thank the Lord for our blessings. And we sent out special thanks to all the family and friends who celebrated with us in one way or another.

Merry Christmas, Everyone!!

2012 …… In Review

Seven days out from Christmas and I’m in disbelief that the year is almost gone.  Most of the time at year end, as I’m sitting in this position looking back, I’m able to take pride in the goals set and attained.  Not so much this year.  I struggled to build back up after some time off at the end of 2011 (a failed attempt to clear the plantar fasciitis).  Then I tore the tendon in my foot at the beginning of summer.  I will not run 1000 miles this year.  I did not run a 1:50 half marathon which I thought was an absolute no brainer.  I did not break 6:30 for a half iron event which I also thought was a no brainer.  I did not complete even one triathlon.  I did not run a marathon.  I did not maintain my weight.  I did not do a lot of things that I had thought were so very possible at the beginning of 2012.  But alas, it wasn’t a bad year.

Occasionally, we just need to “let go” of our goals and go with the flow.   Some things are absolutely beyond our control.   You know the difference between being lazy and not making it happen verses life/injury got in the way and derailed the plans.  So if your life, or God’s plan for your life, got in the way this year and you DID NOT #MakeItHappen, then please take a minute, right now, and let it go.  Next year is another year.   The point of making goals is to constantly challenge oneself and be the best person that you can be at any given time.  Sometimes, the best we have at a given moment is sitting in the rocker ….. rocking our sick child.  Or icing an injured foot over a cold Corona Light.

So as I look back, I do not see failure but instead I look at the positive things that I did accomplish.

I got a photo with THE Green Men at the Shamrock Shuffle this year!  Major accomplishment!  Expect to see this photo several times a year from now til eternity.  I’m VERY proud!  (Nicole F, me, Green Man #1, Maggie, Green Man #2, & Kelly)

Nicole-Me- Green Men_Maggie_Kelly

I raced my first relay event with my “baby” girl, Aby.  Tinley Park Duathlon where my “baby” OFFERED to run for me so that I could still participate even though I was still very early in the injury stage and couldn’t even walk without a limp.

tinleydu_12_meaby

I watched that same baby girl become not just her own person but a really FAST runner.

I managed to keep my crazy lil man safe “enough” to make it through 2012.

So 2012 was not only a good year but a great one!  I encourage you to focus on the positive and do your damndest to make 2013 EVEN better.  We only live once.  Make it count.

Tis the Season of Giving….

While I absolutely understand that the season of giving is upon us there are few things that I have been gifted with as of late that I would like to return.

  1. The “Sickies” – This is my overall generic term for whatever ailment the family contracts.  And man, an army of these sickie germs has paraded through my house over the last couple weeks.  Enough is enough, I’d like to make a return.  Reason?  Although 39 may not look so attractive to some, I’d like to see that birthday.  In the spring.  When these germs are dead.       image
  2. Ill Behaved Children –  While I won’t be naming names MICHAEL!!!!!, someone forgot to tell my lil one that Christmas is coming and that presents are not guaranteed!  The child is a maniac.  It doesn’t matter if I talk nicely and try to negotiate.  It doesn’t matter if I yell and scream.  It doesn’t matter if I spank.  It doesn’t matter if I use the time out chair.  It doesn’t matter what I do, the lil man is a flippin’ maniac.  He screams.  He fights.  He swears.  He hits.  He won’t listen to a damn thing I say but come bedtime, the lil monster turns into an angel batting those eyes and telling me I’m his best friend.  He just wants to be with me.  He NEEDS me to sleep with him cuz he’s scared.  Manipulator.   Monster Dash_2012_Michael PhotoBomber
  3. Vomiting/Spewing Pets –  I’m not really sure what has happened but we can’t get thru a day without stepping in, cleaning up, or shampooing something that shouldn’t be on our floor!  Last week about took the cake when Miss Liberty ate a rabbit.  Yes, a rabbit.  No easy feat mind you.  She had to first catch it and kill it.  All within our 3 measly acres of property which she can’t leave due to the e-fence.  Once she stuffed herself, she then brought me the leftovers.  I thanked her and then disposed of the back legs and spine, which apparently are the “junk” parts if you plan to eat a rabbit anytime soon.  And if you ever ask me why I don’t like to eat meat “much”, let’s just refer back to this, shall we?    Then 45 minutes later, she proceeded to vomit said rabbit all over my living room and kitchen floor.  What’s worse than a fresh rabbit corpse?  A freshly eaten rabbit vomited up on your floor.  Awesome.Libby_Oct 2009
  4. Bad Attitudes – I feel like I’m going crazy.  I’m tired.  I’m miserable.  I’m tired of being tired and miserable.  And don’t jump in here and tell me to drink my Spark b/c this isn’t about an actual lack of energy but about the fact that everyone is sucking away my good vibes.  I try to be upbeat and positive but I’m getting worn down by life.  It may be lack of sleep for so many years straight.  It may be because every aspect of life is so much work.  It may be because I have no down time.  Whatever the reason, I’m getting a bad attitude.  I’d like to make another return, please.  Bring on the good times, happy thoughts and overall love of life!

“It is our attitude that makes us feel happy or unhappy.”  Unknown Author

So I’m going to do the Happy Dance with the beloved Peanuts star, Snoopy, and hope that things right themselves in MY universe very, very soon!

My wish for all of you:  Health, well behaved children, non-vomiting/spewing pets and an AMAZING attitude!

Jingle Bell 5K Run – Kankakee, IL

There were a lot of reasons that I originally registered for the Jingle Bell Run but this weekend things changed.  As I’ve said before, time changes “almost” everything.

image

I was sick at the beginning of the week and by yesterday, Mr. Michael came down with a raging fever while I was out running.  Our fun-filled Christmas themed weekend, the one that I have looked forward to more than any other this entire year, bar the Shamrock Shuffle Weekend, disintegrated before my eyes.

So yesterday, I came straight home from my run and held Michael pretty much the entire day, while hubby proceeded to come down with the creeping crude as well.  Awesome.  So at 4am this morn, I was laying awake holding my feverish baby seriously considering bagging my first race ever.  I didn’t want to go, everyone was sick.  I felt guilty about leaving but was giving one person a ride to the race and meeting many more on site.  Would it have mattered if I didn’t go?  Not really but I felt a bit of obligation.  I went. We had a large group of FNRC Runners.

JingleBell_2012_group

We picked up the packets flawlessly.  Met the director of the Arthritis Foundation.  Met the Race Director.  Pinned our bibs to our shirts.  Waited around and socialized in the warm gymnasium and then returned to the car to do final preparations.  At this point, it was pouring rain and about 37 degrees.  My guilt was running high from leaving hubby and Michael home sick, Aby was feeling crappy and begging to go home.  Nicki didn’t want to run in the pouring, freezing rain mind returning home.  I literally put my head on my steering wheel trying to figure out the right answer.  Stay?  Go?  Time was ticking and the race was upon us and for whatever reason, I decided to stay and run even though I knew we all wanted to just go back home.

During my moment(s) of indecision, we about missed the start, and were standing in the grass when the gun went off.  Myself, Aby & Nicki are below on our way to the start.  Thanks Kim M. for all the F’N photos in this post.  If not for you, we would only see words on a page.  I appreciate your constant, unwavering support of all of us!  JingleBell_2012_me aby nicki

The gun went off, it took me a second to realize that the race was actually starting and we stepped onto the road to run.  It was then that I realized we were quite a ways from the start line.  Normally the poor positioning wouldn’t be a big deal because most chip timed races also have a timing mat at the start line but this one did not.  So we were on gun time but it wasn’t too big of an issue for us cuz we all felt like crap, were there primarily to be festive and run in our awesome Team Sparkle skirts, and support out friends and the the Arthritis Foundation.  No big deal, but a bit of an error on my part.

Amazingly enough, the rain pretty much stopped at the beginning of the race and we were able to run without getting too wet.  The roads were wet but not unsafe.  We had to run thru dodge some puddles.  The route was on campus at the Shapiro Development Center so on closed roads that did not have vehicular traffic.  It was well marked, had 2 waters stops and diverse terrain.  We even went off road shortly and ran a non-technical trail thru a wooded area.  Kinda cool.  Definitely different.  I liked it a lot.

image

Plus, there were so many F’N Runners & Kankakee River Running Club members running, spectating and helping, that it was nice to see so many friendlies.  I run to run.  I show up on a lot of days knowing that I don’t have much to give but I go (and stayed today) because of all YOU who also got out there to support a good cause and take a small break from “real life”.  I went (and stayed) to support all of you, my amazing running family, in the only way that I could.  I ran.

And when it came time for awards, I was even more F’N proud seeing all my friends collect some bling.   From left:  Kate S (1st in age group), Maggie W (1st in age group), Susan M aka “Julie” (first overall female), Nicole F (2nd in age group), & Me (1st in age group).

JingleBell_2012_award winners

And yes, we came home with some cool swag too.  A long sleeve cotton tee, a jingle bell, and a few other cool things.

JingleBell_2012_swag

The post race food options were amazing with everything from hot chocolate, cream of chicken rice soup to pizza.  A costume contest was held, a raffle, and they gave awards 3 deep in all the normal age groups.  It was a good turn out with with well over 400 people finishing the race and a great race in general.  If all goes well, I  hope to go back and actually race the Jingle Bell next year.  I love a well run, festive event where I see lots of friends.  Great job, Jingle Bell Run!

Thanksgiving Traditions…..

I’ve lived in Illinois now for way too long 14 years.  It doesn’t really seem like that long but on the same hand it feels like forever.  It’s not where my heart is but I’ve learned to develop some traditions for me in an attempt to stay sane without my family down the road for back up/support.  In 2006, I ran a Turkey Trot on Thanksgiving morning.   That first year, I just went where a friend went and had to drive forever, then showed up and found out it was an untimed “fun” run.  Hmmmm…… not my thing but it was fun.   Plus it made me realize that was how I wanted to start my Thanksgiving  mornings for as many years into the future as possible.  The following year (2007), I ran the Running For Kicks 4 mile Turkey Trot in Palos Hills and I’ve done the same each year thereafter, except for the year I had Michael.  The route is not easy but its close to home and it definitely makes me feel as if I earned my Thanksgiving Dinner!image

I looked back at my times today for a giggle, thinking about each year and how I handled the hilly route on that particular year.  I had anticipated 2012 being my worse year but I was better than that first year where the course filled with hills was a total shock surprise.

  • 2007 – 34:21 – Holy Hills
  • 2008 – 32:33
  • 2009 – Mr. Michael arrived
  • 2010 – 31:53
  • 2011 – 31:55
  • 2012 – 33:58 (6 months post injury)

So the Turkey Trot is a wonderful tradition which I’ve had on the schedule for many years now and its absolutely one of my favorite parts of the Thanksgiving holiday.  It’s short, fast and not too painful a great start to the day.  I normally take as many people from my neighborhood as I can strong-arm into running fit in my car.  Plus, I’m now part of an amazing group of runners, the Frankfort New Lenox Running Club (AKA – The F’N Runners) and I can always count on a few members to show up to enjoy the fun.

205578_10151275534588896_1189236972_n[1]

The additional friendly faces make the race that much more fun!  Then I go home to a turkey already cooking in the roaster, courtesy of hubby and Mr. Michael, and I cook & clean for an IL family dinner which includes anyone and everyone who would like to come.  YUMMMMM….

A new tradition, which I just started last year, is hosting a run at a local trail on Black Friday.  I don’t recall ever having gone Black Friday shopping and I have zero interest to do it now.  It happens to be a day that many of my run friends have off, so the idea was to start an “all inclusive” run that would include as many people from different running groups as possible.  Last year was a success so despite my recent return to running, I decided to set it up again.  Here is the 2nd Annual Black Friday Runners at Waterfall Glen in Darien, IL!

Waterfall Glen_11-23-12

Please note that despite the fact that these lovely people could have been shopping Black Friday sales, it would have been perfectly understandable if they had just wanted to stay in bed.  The temp was barely 30 degrees and the wind was CRAZY.  It was very cold.  We didn’t do much lollygagging but just made short introductions, took the photo and ran!  We had people in this group from as far south as Monee/Peotone, as far north as Addison, as far west as Manhattan & as far east as Lansing, IN!  Very diverse group of people from all over.  I was super proud that they all came out and I know these specialty Friday runs will continue to grow!  Next Waterfall Glen Run – Good Friday (2013).

I love the idea of traditions and keeping a little bit of routine in our crazy lives but I also love the idea of spending time with as many different people as possible.  There are sooooo many amazing runners in our area and I’d honestly like to know them all by name!  So I float around a lot, running new trails and meeting new people.  Making memories and doing what I love…….RUNNING.  Therefore, many of my traditions are running related.

Beyond Thankful…..

As we close out Thanksgiving for 2012, I look back at what the year has brought us.  It hasn’t been easy and I’ve wanted to jump off the roof to avoid the noise of screaming/fighting children multiple times but it always seems a little better in hindsight and I am always thankful.  I’m thankful for the health of our “little” ones.  I’m thankful hubby and I both have jobs.  I’m thankful hubby and I haven’t killed each other because of those little screaming/fighting angels in stressed out states of mind.  I’m thankful the holidays are upon us so that we can CELEBRATE the close of 2012  glory of the season.

For me, the best part of 2012 has been watching Aby come into her own as a runner.  Watching her on the Cross Country course, really running, in a strong way I had never seen before this year.  Watching her at races, as I trailed behind her knowing that forevermore, she will be the fastest runner in the house.

image

Running side by side with her on the trail and in weekend runs when she opted to stay with me rather than running ahead.

image

Taking her to races that she has never been able to run before because I now know that she can hold her own and is mature enough to handle real races and tough terrain.

Watching her collect some serious hardware along the way.

It really has been an amazing year!  The Thanksgiving Holiday brings most of us a 4 day weekend and plenty of time to reflect on the things for which we are thankful.  It is by far my favorite weekend of the year and the only one where I can expect 4 days off work in a row.  The only one we automatically know on which day of the week the holiday will fall.  Definitely the easiest one to plan and the easiest to set up annual traditions.  I’ve been trying to become more traditional over the last few years, trying to keep at least a few things the same from year to year in both family and life so that on occasion we can step away from the chaos for just a minute and KNOW what to expect. During a time where we are taught to expect the unexpected, it’s comforting to make, and then hang onto, a few traditions.

Which holiday is easiest for you?  Which holds the most “traditions” for you and your family?  More up on our Thanksgiving traditions tomorrow!

How To Hide The Veggies

As a wife and mother I am constantly battling the family on food choices. I want them to eat somewhat healthy and drink water and they don’t. So I’ve learned to pick my battles and HIDE the veggies in foods they like. Case in point, this week I was crunched on time and wanted to do something simple like pasta. Although I frequently us whole wheat pasta as a healthier option, when we do pasta night, it never comes with a side of veggies …….. Unless I hide them.

20121116-094124.jpg

I boiled my garden veggie pasta al dente, then grabbed a baking dish and started layering. Stuffing in as many veggies as possible.

20121116-094841.jpg

Each time covering the veggies with a little sauce and cheese.

20121116-094942.jpg

Then bake til bubbly & everyone is happy.

20121116-095306.jpg

This was so easy and can be done with a variety of veggies but I used what I had on hand. Please feel free to change it up to suit your family!

1 box of garden veggie pasta cooked al dente
1.5 jars pasta sauce
2 chicken breasts cooked & shredded
1 bag of shredded cheese
1/2 bag of fresh spinach
1 box mushrooms
Garlic & Italian Seasoning to taste.

I sprayed the baking dish with cooking spray and started layering: sauce, veggies, pasta, chicken, cheese, spices, sauce, repeat. Bake at 425 degrees until bubbly, which was about 35 minutes in my oven.

Don’t be afraid to hide the veggies on your family too! I do it all the time and most of the time they don’t seem to mind too much although if I put spinach in Aby’s scrambled eggs one more time she may take over the cooking!. Good luck!

Halloween Confessions…..

I always consider Halloween a success when I can squeeze in a run before trick or treating.  So yesterday was a WIN in my opinion because I grabbed a little over 4 miles at Yankee and Bremen Woods before hitting the candy Trick or Treat Trail with the kiddos!

CONFESSIONS:

  • 4.17 miles ran – 9 min pace
  • 2 Coyotes, 2 Deer and countless squirrels scared the shit out of me startled me in the woods.

  • 2.5 fun size Three Musketeers consumed and I don’t even really like them.

  • 1 fun size Snickers consumed
  • 0  Almond Joys received  – 0 consumed
  • The fact that Almond Joys were “out” for this year was a small blessing and saved me a ton of calories!
  • .49 miles walked before Michael pooped out
  • Yes, I started my Garmin to go Trick or Treating.
  • 1 baby wipe, 1 cucumber wipe & 4 cotton balls with make-up remover needed to remove the green face paint from my lil Army man!

  • This was Round #2 of 2012 Trick or Treating. Lexi (Clawdeen from Monster High), Aby (Cleopatra), & Michael (Army Man) from the weekend:
